My name is Jane Fern and I live on the Banks of the River Dee in Heswall.  I was born in London in 1961 and raised in Brighton.  I developed an interest in cooking and experimenting with different ingredients at a very young age, despite the fact that the most exotic items in the average British supermarket were a pair of shrunken garlic bulbs in a small blue cardboard box !

I worked as a professional cook in 70s/80s Brighton for a variety of establishments, ranging from hip vegetarian cafes to upscale Cordon Bleu restaurants and even the occasional prince’s palace.

I am also a keen amateur grower and have been cultivating fruit and veg for nearly thirty years now.  I started with an allotment in Shoreham-by-Sea and then eventually developed my own cottage gardens in Shropshire and Heswall.  I grow all sorts of things but I mostly grow chillies, lots of chillies!

    • Hi Bill, thanks for your message, all my sweet chilli sauces are great for stir fry’s or as a dipping sauce, along side veggie spring rolls, Thai fishcakes, prawns, crispy chicken strips etc. You can use it to make a classic sweet & sour pork. Makes a great Barbecue marinade. Use to make a super speedy Tuna Pâté, to one tin of tuna just add some sauce and a spoonful or two of cream cheese, 1tbsp of mayo and a squeeze of lemon juice. Try Ottolenghi’s butter beans with sweet chilli sauce and fresh herbs or Lamb shwarma kebab with spinach, red onion, peppers, sweet chilli sauce & garlic sauce. Make a sweet potato, spinach and feta salad with a sweet chilli dressing or use as a sauce for stir fried purple sprouting broccoli . Hope That helps ! Janey
